In general, animal products have all the essential amino acids, whereas plant products (including nuts) don't. The combination of beans + rice does. Fat-soluble vitamins are not excreted easily. As a result your body tends to store up a lot and it can take a while before a dietary deficiency manifests. Yes, night blindness is caused by vitamin A deficiency. Most people get their thiamine from grains. A, D, E, K, and retinol are all fat-soluble. The B vitamins are all water soluble (as is vitamin C). B12 injections are used to treat pernicious anemia.

I don't know that specific knife; but can tell you from military know-how, that there are only a few knives that can not be sharpened with standard tools. It (sharpening) is more a matter of technique, and your purposes don't appear to call for special concern. What you could do is practice on some old kitchen knife first.
2 :
Yes, you can sharpen that knife with the household sharpener. I do recommend that you use a sharpening stone, with oil, but that is just me.
3 :
You could, but if it's an antique I would leave it to the pros's. Do you work in a hospital? Where I worked carrying a knife would get you suspended if not fired
4 :
A sharpening stone is definitely the best way to go. You can use a kitchen knife sharpener and it will work, but it also may slowly erode the blade.
